45 minutes

6 servings

Easy to moderate

Ingredients

  • ½ pound beef bacon or turkey bacon, finely chopped

  • 1 medium red onion, finely diced

  • 3 celery stalks, finely diced

  • 4 tablespoons unsalted butter

  • 1 cup all-purpose flour

  • 3 cups chicken stock

  • 4 cups whole milk

  • 1 pound aged white cheddar cheese, freshly grated

  • 1 tablespoon Worcestershire sauce, using an alcohol-free variety if needed

  • 1 tablespoon Dijon mustard

  • ½ cup additional chicken stock, to replace the beer used in some traditional versions

  • ½ teaspoon hot sauce, optional

  • Salt and freshly ground black pepper, to taste

  • Chopped chives or green onions, for garnish

This is an adapted, alcohol-free version rather than an exact reproduction of Disney’s published formula.

Step-by-Step Instructions

Step 1: Cook the bacon

Place a large, heavy-bottomed saucepan or Dutch oven over medium heat.

Add the chopped beef or turkey bacon and cook until lightly browned and fragrant. Depending on the product, you may need a little neutral cooking oil to prevent sticking.

Stir occasionally to ensure the pieces cook evenly.

Once browned, leave the bacon in the pot to flavor the soup.

Step 2: Add the vegetables

Add the diced red onion and celery.

Cook for approximately 5 minutes, stirring frequently, until the vegetables begin to soften.

The onions should become translucent, while the celery should lose some of its firmness.

Avoid browning the vegetables too deeply. The goal is to create a flavorful base without overwhelming the delicate cheese flavor.

Step 3: Melt the butter

Add the unsalted butter to the saucepan.

Allow it to melt completely, stirring it into the bacon and vegetables.

This mixture will form the foundation of the thickening agent.

Step 4: Make the roux

Sprinkle the flour gradually over the vegetables.

Stir continuously for about 3–4 minutes.

The flour should combine with the fat to create a thick paste.

Cooking the flour briefly removes its raw taste and helps the finished soup develop a smooth consistency.

Keep the heat moderate so the mixture doesn’t burn.

Step 5: Add the stock

Slowly pour in the chicken stock while whisking.

Add a small amount at first, stirring until the mixture becomes smooth, then continue adding the remaining stock.
